One of our importing partners, Novus Coffee Importers, then sent this blend to be be decaffeinated through Swiss Water Decaffeination process.
Here’s what they say about this excellent coffee: “The Colombia we used is our Medellin Excelso EP, a regional blend of smallholder producers from the region growing mainly Colombia and Castillo varieties at altitudes ranging from 1,200-1,600 meters above sea level.
Our Nicaragua is a “Type A” SHG EP blend of coffees from Matagalpa and Jinotega which Novus created to showcase the best example of a classic Nicaraguan flavor profile. This coffee is grown by smallholder farmers at altitudes between 1,175 and 1,400 meters above sea level, growing mainly caturra, catuai and marseillesa varieties.
Swiss Water Decaf is based out of Vancouver, BC, Canada and has developed a method of decaffeination which uses no chemicals and a lower temperature than other methods, keeping more of the intrinsic character of the coffee alive while still effectively removing all the caffeine. We find the coffee to be round and complex with a juicy acidity and notes of chocolate and roasted nuts.”
