Roberto Landaverde owns several small farms in El Túnel, including this one, where he grows Pacas variety, a natural mutation of the Bourbon variety. Pacas has a single-gene mutation that causes the plant to grow smaller (dwarfism). This is it’s chief virtue: the plant’s small size leads to higher potential yields and the possibility of placing plants closer together to increase total fruit production on a farm. This coffee is sourced by Café Imports while still in parchment, where they perform the dry milling and final sorting to produce higher quality microlots, offering the best selection of coffees from El Salvador.
